Course 1

Jackson Estate 2016 Pinot Noir

Beef Carpaccio with Red Onion Jam, Balsamic, Wild Arugula Salad, Parmesan, Caper Aioli

Established in 1983, the Anderson Valley AVA is in a narrow valley carved out by years of erosion from the Navarro River. As the river runs through the valley and empties into the ocean, it cuts through the mountains to allow the cold ocean wind and coastal fog to creep in.


The wine shows its cool-climate origins in bright acidity, accenting the rich avors of wild strawberries, black cherries, and plum. Firm minerality grounds the wine. The tannins are rm, yet with silkiness on the nish, while oak barrel aging brings a smoky, sandalwood note. Beautiful to drink now on release, this Pinot will age well over the next six-plus years easily.

Course 2

Jackson Estate 2014 Cabernet Sauvignon

Forest Mushroom and Baby Spinach Pot-stickers, Black Truffle Cream, Green Onion Chiffonade

Established in 1984, the Alexander Valley AVA is a long, slim winegrowing region dened by the Russian River winding up its mid line and the Mayacamas Mountains lining its eastern borders. The AVA, comprised mainly of mountains, ridges, hillsides and benchlands, is lled with a diverse array of soils rich in iron based volcanic rock, gravel, sand and clay.

This Cabernet shows mountain intensity in its rich blackberry, black currant and cassis avors. It’s bone dry, with thick but rened long tannins, and brightened by a ne burst of fruit and acidity. Blended with a little Petit Verdot for complexity and richness, it drinks beautifully now, and will age for a decade or longer.

Course 3

Jackson Estate 2016 Chardonnay

Tart Strawberry Rhubarb Cobbler, Jackson Estate Chardonnay Ice Cream, Candied Rosemary

Established in 1981, the Santa Maria Valley AVA is nestled along the California Coast in a rare east-west mountain range, unlike the more common north-south valleys. This creates a giant funnel from the Pacic, ushering a cooling marine inuence into the region on an almost daily basis.

The chilly climate and very long growing season allows the grapes to retain a high natural acidity, while the narrow diurnal temperatures of the growing season results in extraordinarily avorful grapes. Rich and creamy with golden mango, pineapple, yellow peach, and honeysuckle ower avors, plus a hint of tangerine. Oak barrel aging adds notes of buttered biscuits and vanilla bean to the palate and long, lingering nish.
